The GR-SG-63T is Boucher's S-Jumbo in the Grande Reserve spec: 3A torrefied flamed maple back and sides, a Gold Touch top of torrefied AAAA Adirondack red spruce, and gold Gotoh open gear tuners on Boucher's own headstock. Boucher roasts the spruce to age it, a process it developed with Université Laval, and in this series the maple is torrefied too. The neck joins at the 14th fret and the board carries crown style markers. The maple's figure varies guitar to guitar, so the photos show one example.
For the same S-Jumbo in 5A maple, look at the GR-SG-163T. The GR-SG-62T is this 3A build as a Dreadnought, and the Studio Goose SG-63 is an S-Jumbo in Canadian Curly Maple.
